Treat Your Mum This Mother’s Day with Decadent but Healthy Desserts!

We’ve rounded up some of our favorite delicious and decadent desserts perfect for Mother’s Day Celebrations! What better way to let your Mom know that you love her than to treat her with treats this good!

Oven Bake Peach and Berry Pancake

All you need:

  • 1 tablespoon ghee, melted, for greasing
  • 80 g (2¾ oz/¾ cup) almond meal
  • 2 tablespoons rice malt syrup, plus extra to serve
  • ½ teaspoon salt
  • 4 eggs, lightly beaten
  • grated zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 125 ml (4 fl oz/½ cup) almond or rice milk
  • 1 large peach, sliced
  • 125 g (4½ oz/1 cup) mixed berries, plus extra to serve

What to do:

Preheat the oven to 200°C (400°F) and grease a 25 cm (10 inch) ovenproof frying pan or baking dish with the ghee.

Put the almond meal, rice malt syrup, salt, eggs, lemon zest and vanilla in a medium bowl and whisk to combine. Gradually pour in the milk, whisking until smooth. Place the peach and berries in the prepared pan and pour the batter over the top.

Bake for 20–25 minutes or until puffed and golden. To serve, slice into wedges and top with extra rice malt syrup and berries.

Mint- Choc Chia Pudding

All you need:

  • 1 cup coconut milk or nut milk of choice
  • 1/4 cup chia seeds
  • 3 tbsp cocoa powder
  • 1 tbsp raw honey or pure maple syrup
  • Handful of fresh mint, finely chopped

What to do:

In a medium sized bowl, add all ingredients and whisk together.

Divide between 2 small bowls or moulds.

Cover and refrigerate overnight.

In the morning, or for dessert, serve with some fresh berries and shredded coconut.

Gluten-Free Pistachio Rosewater Brownies

All you need:

  • 3 1/2 oz (100 g) organic, unsweetened dark chocolate
  • 2 cups almond meal
  • 1 tsp baking powder
  • 1/2 cup crushed pistachios
  • 3 tbsp coconut oil
  • 1/2 cup coconut sugar
  • 2 eggs (or 1 tbsp ground chia + 1/4 warm water)
  • 2 tsp vanilla extract
  • 3 tbsp rosewater
  • rose petals & crushed pistachios to decorate

What to do:

Preheat the oven to 350°F (180°C).

Line an 8-inch square pan with parchment paper.

Melt the chocolate over low heat or use a double boiler.

Combine all dry ingredients in a large mixing bowl.

Combine all wet ingredients in your food processor or blender.

Add the melted chocolate and combine until smooth- should be creamy, not too dry.

Mix wet ingredients into the dry, and mix well.

Pour batter into the pan, smooth it out with a spatula & bake it for about 25-30 minutes.

Insert a toothpick in to make sure cooked through.  They should be firm when you press down.

Cool completely in the pan on a wire rack.

Sprinkle with some extra crushed pistachios and rose petals, for an extra touch.

Mini Coconut & Lime ‘Cheesecakes’

All you need:

For the base:

  • ½ cup macadamia nuts or almonds
  • ½ cup dates
  • 2 tbsp coconut oil
  • 2 tbsp shredded coconut

What to do:

Place all ingredients into a food processor and blitz until fine and combined.

Divide the base between 6 mini moulds (line molds with baking paper or use silicone molds)

Press down evenly. Place in freezer to set while you make the filling.

For the filling:

  • 2 cups raw cashews, soaked overnight
  • 1 cup coconut cream
  • ¼ cup maple syrup
  • Juice and zest of 1 lime

What to do:

Place all the ingredients into the food processor and process until you have a smooth, silky texture.

Take the bases out of freezer and pour mixture over bases, evenly.

Let the cheesecakes set in the freezer for at least 3 hours.

Keep cheesecakes in the freezer until 10-15 minutes prior to serving.

Top with some fresh lime and crushed nuts.
