Description: This strawberry thirst quencher is a terrific summer drink which pairs perfectly with fresh mint and lime juice.
Ice cubes, to fill a cocktail shaker and tumbler
50 ml honey
10-12 fresh mint leaves
20 ml freshly squeezed lime juice
30 ml soda water
1 slice of lemon for garnish
Blend the strawberries in for 30 to 45 seconds, until they turn to purĂ©e. Set aside.
Fill up a cocktail shaker with ice cubes; add the honey and mint leaves, close the lid and shake vigorously for a minute. Add in the strawberry purĂ©e and lime juice and shake for another minute.
Strain the liquid from the shaker into a short tumbler filled with ice.
Add a dash of soda water, garnish with mint leaves and a slice of lime and serve.
