Description: Shinwari Karahi is a tasty Afghani Chicken Karahi. It consists of chicken cooked in a variety of spices and herbs.
Chicken Karahi cut 750 grams
Ginger Garlic paste 1 tbsp.
Sliced Tomato Â½ kg
Green Chili 4
Ginger Julian for garnish
Chopped Green Coriander for garnish
Salt 1/2 tsp.
Whole Red Chili 4
Cumin 1 tsp.
Dry Coriander 1 tbsp.
Black Pepper 10
Green Illaichi (cardamom) 1-2
Black Cardamom 2
Darchini 1 (Cinnamon)
Tez Patta 1 (Bay Leaf)
Oil Â½ cup
In a frying pan roast whole red chili, cumin, and coriander. Grind them along with black pepper, green cardamom, black cardamom, cinnamon and the bay leaf. Do not reduce it to powdered form, it should be crossly grind. Karahi masala is ready.
In Â½ a cup of oil golden fry chicken and remove it from oil keep aside. In the same oil add tomato; cover and let them steam on low heat for 7-10 min.
Remove skin as soon as tomatoes are soft. Now add ginger and garlic paste fry for few mins and then add chicken and prepared karahi masala, also include salt to taste. Mix and continue cooking on low heat until you see the oil separating. Now include green chilies and keep on very low flame, known as a â€˜dummâ€™ for 7-10 min.
Garnish it with chopped fresh coriander, Julian cut ginger.
Shinwar Karahi is ready to serve.
