Hot & Sour Soup

Description: A family favourite we’ve all been eating for years. This recipe tastes just like take-out! This hot and sour soup is rich and thick with just the right flavors.

INGREDIENTS

Sugar 1 tbsp.
Salt to taste
Chinese Salt 1/2 tbsp.
White Pepper Powder 1 tbsp.
Food Colour (Red or Orange) 1 pinch
Chicken Boneless (shredded) 200 gm.
Cabbage 40-50 gm.
Carrot 40-50 gm.
Tomato Ketchup 1 cup
Lemon Juice 1 large
Corn flour 1/2 cup
Eggs 3
Chicken Powder 2 tsp.
Chili Sauce 15 ml
Prawns 100 gm.
Chicken broth 2 ½ cups

INSTRUCTIONS

Boil 2 ½ cups of chicken broth. Now add chicken powder and mix well.  Then add sauce, spices, sugar, chicken and prawns and cook for 15-20 minutes. Now add ketchup and vegetables and cook for another 10 minutes.

Beat eggs and add in the soup, stirring slowly and continuously so that the eggs break down to smaller pieces.  Now mix corn flour in a little water, make sure there is no lump formation, for this keep stirring continuously and break down any lumps you find with the utensil you are using to stir. Also add food colour in it and slowly mix in the soup.

Add lemon juice in the end, cook for 10 minutes till a nice consistency is achieved and serve with fish crackers.
