Honeyed Pear & Blue Cheese Tart

Ingredients:

BLUE CHEESE & PEAR FILLING

5 Ounces Stilton cheese

3 Tbsp. Heavy Cream

3 Pears (Peeled, Thinly Sliced using a Mandolin)

HONEY SYRUP

1/2 Cup Honey

2 Tbsp. Water

1/2 Tsp. Vanilla Bean Paste

POACHED PEARS

4 Cups Water

1/2 Cup Honey

1 Cinnamon Stick

3/4 Tsp. Vanilla Extract

3 Small Ripe Pears (Peeled and Cut Vertically in Half)

GINGER CRUST

1 1/2 Cups Flour

1 Tbsp. Granulated Sugar

3/4 Tsp. Flake Sea Salt

1/2 Tsp. Cinnamon

1/2 Tsp. Ground Ginger

10 Tbsp. Frozen Unsalted Butter

1 Tbsp. Heavy Cream

4 to 6 Tbsp. Ice Water

Instructions:

For the ginger crust, mix together the flour, sugar, salt, cinnamon, and ginger in a large bowl. Grate the frozen butter over the bowl, pausing to mix in the butter shards every 20 seconds.

Add the cream and then the water. Wrap with plastic wrap and refrigerate for 30 minutes before rolling it out. Press it into tart pan. Place it in a freezer for at least 30 minutes and up to 4 hours.

Preheat the oven to 375 degrees. Place the tart crust in the oven and bake it for 15 minutes.

For the pear and blue cheese filling, beat the blue cheese and cream together in the bowl.

For the honey syrup, bring the honey, water, and vanilla bean paste to a boil in a small saucepan. Allow it to cook for 5 minutes.

Spread the blue cheese mixture onto the bottom of the tart. Arrange the pear slices on top of it, lightly brushing each one with the honey syrup. Place the tart in the oven and bake until the blue cheese turns deeply golden brown and the crust is lightly golden, about 25 minutes.

While the tart is baking, you can prepare the poached pears. Bring the water, honey, cinnamon, and vanilla to a boil in a medium saucepan. Add the pear halves and cook, stirring gently every few minutes, about 15 to 20 minutes. Set the on a wire rack to dry for 10 minutes.
