Grilled Pesto Chicken Sandwich

Description: Toasted in olive oil and filled with grilled chicken, pesto, and cheese that simply melts in your mouth. A perfect, easy snack for you and the kids alike.


Pounded thin boneless skinless Chicken Breasts 1 pound (about 2 small)
Oregano 2 tsp.
Salt and pepper to taste
Bread 8 slices
Pesto ÂĽ cup
Mayonnaise (optional)
Medium sliced Tomatoes 2
Mozzarella Cheese 4 slices
Olive Oil (optional)


Sprinkle both sides of your flattened chicken breasts with oregano, salt, and pepper.

Heat a grill, grill pan or large skillet over medium-high heat. If you are using a skillet, coat with a little olive oil. Cook chicken breasts for 5 to 8 minutes per side, it should be completely tender when done. On a cutting board let the chicken rest for 5 minutes before slicing into ½ inch wide strips.

Spreading mayonnaise (if desired) and about a tbsp. of pesto over each bread slice. Add chicken, tomatoes, and cheese, and brush tops and bottoms of the sandwiches lightly with olive oil or a thin layer of butter to help them brown.


Cook sandwiches over medium to medium high heat until first side is toasted then flip. The sandwiches will be done when both sides are golden and the cheese melts.

Note: Chicken can be cooked up to two days in advance, but needs to be reheated before going on the sandwich because it won’t heat well while toasting the bread.
