Chicken Croissants | Meera Asad

For the dough:
2 cups flour
½ cup lukewarm milk
2 tbsp. butter (room temperature)
2 tbsp. Oil
¼ tsp. baking powder
1 tsp. sugar
1 tsp. salt
½ tsp. yeast

For the filling:
250 grams chicken tikka chunks
Any tikka masala
3-4 chopped green chilies
4 tbsp. sweet corn
1 tbsp. cream
1 tsp. lemon juice
1 tsp. soy sauce


Directions for the dough:
For the dough, whisk the flour, salt, sugar, yeast and baking powder.
Once thoroughly whisked, add in the oil and butter.
Rub with hands till it resembles fine crumbs.
Add in milk and knead into a soft dough.
Let it rest for 45 minutes to 1 hour in a dark and warm place.

Directions for the filling:
Mix all the ingredients together.
Mash chicken chunks with the fork so the mixture is shredded and easier to handle.

For the croissants:
Roll out dough into round shape.
Cut it into 8 pieces.
Form 8 triangles shapes with help of a knife or a pizza cutter.
Flatten one side of the triangle from corner to corner, keeping the third corner sharp.
Place small amount of filling on the flatter side from one end to the other near edge.
Roll the filling side all the way up to the third sharp corner so that filling is nicely sealed in.
Give it an egg wash.
Let it rise for 15-20 minutes in a warm place.
Bake for 15-20 minutes until golden brown.
