Description: An easy to make an apple and cinnamon flavoured muffin recipe that will fill your kitchen with aroma.
For the batter
Â˝ cup sugar
1 teaspoon vanilla extract
2Â˝ tablespoons canola oil
3 tablespoons milk
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon powder
1/2 teaspoon salt
1 teaspoon lemon zest (optional)
1 apple, grated
Butter or oil for greasing
For the streusel topping
3 tablespoons cold unsalted butter
2 tablespoons all-purpose flour
5 tablespoons brown sugar
2 tablespoons chopped cashew nuts (optional)
For The Batter
In a bowl, crack the egg and stir in the sugar and vanilla extract. Add the canola oil and milk, continue to stir and set aside.
Add the flour, baking powder, baking soda, cinnamon powder and salt in a bowl. Add the lemon zest, the grated apples and the egg mixture, use a spatula to mix together until you canâ€™t see the flour anymore.
Generously grease a muffin tray with either butter or oil and transfer the batter into the tray.
For The Streusel Topping
Add the butter, flour, brown sugar and cashew nuts in a bowl and mix well until it becomes crumbly. Sprinkle this topping over the batter in the muffin pan. Place the muffin tray in the oven (200 degrees Celsius) for about 20 minutes. When you remove your muffins they should be crispy on the top and moist within. Enjoy!
