New Year Celebration is the time to indulge. Calories don’t matter. Only happiness counts. Starting the day with ice cream and ending it with cake seems only natural during the festive period.

Here is an easy and quick recipe of Nutella Chocolate Chip Cookies:

½ cup all-purpose flour

1 large egg

2 tablespoons sugar

1 cup of Nutella

½ cup milk chocolate chips

Preheat oven to 350 degrees F.

In a large bowl, using a spoon, mix together flour, egg, sugar and Nutella.

Stir in chocolate chips until evenly distributed.

Drop the dough by spoonful on to a cookie sheet, about 2 inches apart.

Bake for about 8 to 10 minutes. Let cool for about 10 minutes before serving.

Strawberry and lime cheesecake in a glass:

Enjoy a scrumptious and delicious Strawberry and Lime Cheesecake on this New Year.

2 limes

250g punned strawberries, quartered

1 cup icing sugar mixture

250g block cream cheese, chopped, softened

600ml thickened cream

1tsp vanilla bean paste

85g lime jelly, made and set following packet instructions

12 butternut snap biscuits

Use a small, sharp knife to remove zest and pith from limes. Cut out segments, then cut in half and put in a large bowl. Squeeze over juice from leftover lime carcass, then stir in strawberries and 1/4 cup of the icing sugar. Set aside.

Put cream cheese and 1/2 cup of the icing sugar in the bowl of an electric mixer and beat on high, using paddle attachment, until fluffy and light. Add 200ml of the cream and continue beating until well combined and fluffy. Set aside.

Put vanilla, remaining cream and remaining icing sugar in a separate bowl of an electric mixer and beat on high, using whisk attachment, until soft peaks form. Set aside.

Finely dice lime jelly. Break biscuits into bite-sized pieces and put in the base of six 1-cup capacity glasses. Top with jelly, cream cheese mixture, strawberry mixture and a dollop of whipped cream. Serve with remaining cream on the side.

Apple Rings:

A quick and delicious snack of sliced apple rings dipped in a yogurt batter, fried, and topped with cinnamon-sugar.

1 cup all-purpose flour

1/4 teaspoon baking powder

1/4 teaspoon salt

1 cup plain yogurt

1 large egg

6 cooking apples, like Granny Smith, sliced into 1/4-inch thick slices

Canola Oil for Frying

1/2 cup sugar

1 to 2 teaspoons cinnamon

In a small mixing bowl whisk together flour, baking powder and salt. Set aside. In a separate bowl whisk together yogurt and 1 egg; whisk until well combined. Whisk yogurt mixture into flour mixture; set aside.

Slice apples and using a round small cookie cutter, or a knife, cut “rings” out of the middle of the apple slices. In a large deep skillet, heat the oil over medium-low heat to 375 degrees. Dip the apple rings in the batter then place in the skillet and cook in batches, 1 to 2 minutes per slice, or until golden, turning once to cook the other side. In a bowl or plate combine sugar and cinnamon; mix well. Sprinkle sugar and Enjoy!
